The Mexican Bean Burger

This can be a great serving with bun, sour cream, cheese or lettuce.

Total Prep Time: 1 hour

Serving Size: 8

Ingredient List:

- a sliced carrot,

- 15 ounces (1 can), of kidney beans,

- ½ cup of chopped green pepper,

- ½ cup of chopped onion,

- 2 cups of salsa,

- a cup of dried bread crumbs,

- ½ cup of whole wheat flour,

- ½ tsp. of ground black pepper,

- a pinch of salt to taste, and

- a pinch of chili powder.

Instructions:

Place the carrot into a bowl, and fill the bowl with ¼ inch of water, and wrap-cover with plastic, then cook in microwave for about 3 minutes until soft. Mash the bean with carrot inside a bowl, and mi the pepper, salsa, bread crumbs, and wheat flour- season this mix with black pepper, chili powder and salt, then add the flour to make the mix creamy, and divide the mix into 8 patties before placing on greased baking sheet. Heat a skillet over high heat, before coating with cooking spray. Fry the patties on each side, for about 8 minutes until they become brown and firm.
